BLISTERED SHISHITO PEPPERS
While shishito peppers are Japanese, they are the star of a popular tapa in Spain called Pimientos de Padrón.

1. Prep Your Peppers
Wash your peppers and pat them dry.
2. Mix
Add your peppers to a bowl, drizzle them with olive oil, and give them a good toss until fully coated.
3. Cook Your Peppers
Heat a skillet on medium-high heat. Add your peppers and stir occasionally. Let them cook until they get some nice charred spots and become tender, which usually takes about 10 to 12 minutes.
4. Plate and Season
Once they're done, transfer your peppers to a plate. Squeeze a lemon wedge over them for some zing and top with flakey sea salt. Make sure to have a little bowl on the side for those pepper stems. Enjoy!
