GRILLED LOBSTER

Treat yourself to a delicious and easy-to-make grilled lobster tail with this simple recipe. Perfect for special occasions or a delightful summer meal.

1. Prepare the Lobster

Prepare your lobster. Using scissors, cut the rib pieces at the bottom of the lobster tail (this helps them not curl when grilling). Then top down the top of the lobster, and a V at the tail (cutting away from the center of the tail).

You can then start to loosen the meat from shell, keeping the fin end attached. Gently lift the meat out of the shell and lay over the top of the shell.

2. Marinade

In a small bowl, combine the olive oil, chopped chives, garlic, salt and pepper. Mix well and then spoon of the marinade over lobster meat. Cover and refrigerate for 20-30 minutes.

3. Grill

Place lobster tails, meat side up, on grill rack. Grill, covered, over medium heat until meat is opaque, roughly 10-12 minutes.

Flip and sear on meat side for 1 - 2 minute to get a quick char.

4. Finish

Remove from heat, spoon remaining marinade over the top, and enjoy!
