PUMPKIN COOKIES

These pumpkin cookies are SO delicious and look great. I highly recommend giving these delicious babies a try. They are also great the next morning with coffee.

1. Start

Preheat oven to 350°. Line your baking sheets with parchment paper. You will need at least 2 as this recipe makes 22 cookies.  

2. Mix Dry Ingredients

Next, add the flour to a medium-sized bowl (be sure to spoon it into your measuring cup and then scrape off the top so it’s not over-packed). Then add 1 tbsp pumpkin pie spice, ½ tsp baking soda, ½ tsp baking powder, and ½ tsp salt. 

3. Dry Your Pumpkin Puree

Prepare your pumpkin by removing some of the moisture from it. You can do this by patting it dry between two paper towels. Repeat about 4 times until the pumpkin has reduced in size by half to about ¼ cup. You don’t want it to be too dry, but this step is key or your cookies will not rise. Set aside. 

4. Mix Butter, Brown Sugar, and Cream

In a large bowl, add your softened butter and brown sugar and cream it together using an electric mixer on high speed for 1-2 minutes until fluffy.

5. Add Egg Yolks and Vanilla

Add your two egg yolks and vanilla and mix on medium speed for about 1-2 minutes or until combined.

6. Combine

Add in the pumpkin and mix on medium-low speed to combine and then add your dry ingredients and mix on low speed until combined. Set aside.

7. Make Your Spiced Sugar

Mix your white sugar with 1 tsp of pumpkin pie spice. 

8. Shape Your Cookies

Start making your cookies. Start rolling them with your hands to 1-½ inch balls and then roll them in the spiced sugar.

9. Bake

Place on your baking sheet and bake for 13-14 minutes. Once done, let the cookies cool on the baking sheet for 5 minutes. 

10. Be Extra

While your cookies are baking, make your brown butter icing. Melt your butter in a pan over medium heat and allow it to brown slightly. Once melted, I like to let it simmer for another 2-3 minutes, stirring constantly. Remove from heat and let cool for 5 minutes. Once cooled, whisk together the powdered sugar, milk, vanilla, salt, and browned butter. Drizzle immediately over your cookies (the icing will set quickly), sprinkle with flakey salt, dust with some powdered sugar, and enjoy!
