SPAGHETTI AL LIMONE
If you ever go to Lil' Frankie's in NYC, you have to try their signature Spaghetti al Limone. It’s the inspiration for this easy-to-make, impossible-not-to-love pasta.

You will need 2 pots, a ladle, and a wooden spoon for this recipe.
1. Cook the Spaghetti
Bring a pot of water to a boil. Try to use as little water as possible — you need your pasta water to be starchy. Add a generous amount of salt and cook your spaghetti as directed until al dente, about 9 minutes.
2. Warm Your Pan
Use the heat from the boiling pot to warm the pan. The key to this sauce is making an emulsion between the pasta water, butter, and lemon juice, so you need to warm the pan, but not over direct heat.
You also want your serving plates to be warm.
3. Mix in Pan
Squeeze lemon juice into your pan. Then add your pasta using tongs. Ladle in a little extra starchy water, so you can see some at the bottom of your pan.
Add your butter and the lemon rinds to the pot and mix using a wooden spoon until the lemon, butter, and water have combined into a sauce.
4. Plate Your Pasta
Plate your pasta, top with remaining sauce, and add a generous amount of parmesan cheese on top (about ¼ cup). Add half a lemon to the side and serve!
