STRAWBERRY CUPCAKES
A simple vanilla cupcake, decorated with a strawberry compote mixed with vanilla frosting, and topped with strawberry slices. You could also add blueberries. Highly recommend making these for the 4th.

1. Preheat
Set your oven to 350 degrees.
2. Mix Wet Ingredients
In a Stand Mixer, add butter, oil, and sugar, and mix until combined. Add in one egg at a time and beat in until mixed. Once all of your eggs are added, mix in your vanilla extract.
3. Mix Dry Ingredients
In a separate bowl, mix together the flour, baking powder, and salt.
4. Combine
Start to combine your dry and wet mixtures and milk to form your cupcake batter. Mix until smooth.
5. Bake
Add your batter to a cupcake tin and bake at 350 for 30-35 minutes, or until a toothpick inserted into the center comes out clean. While your cupcakes are baking you can get start on your frosting and compote.
6. Make Your Compote
Add all ingredients to a pot and cook down for about 5 minutes. Stir and set aside until completely cool.
7. Make Your Frosting
Add butter to a stand mixer and beat until smooth. Then add ½ cup of powdered sugar at a time, mixing in-between. Once the sugar is combined with the butter, mix in 1 tbsp of heavy cream at a time. Finally, mix in your vanilla extract.
8. Combine Compote and Frosting
Once your strawberries and cupcakes are cooled, you can mix the strawberries into your frosting (recommend using about half of the strawberry compote or to taste).
9. Finish
Frost your cupcakes, top with a slice of strawberry or other fruit, and enjoy!
