TEA SANDWICHES
Something about the tiny sandwiches, fun decor, and beautiful pastries gets me every time. Afternoon tea was one of my favorite things to do in London, so I started recreating it at home for my family and friends and now it’s now one of my favorite parties to host.

Smoked Salmon Sandwich
Soften cream cheese and mix with fresh chopped dill and lemon juice to taste. Lay out the number of bread slices you will need. Four slices of bread will make 8-12 finger sandwiches.
Using a sharp knife, remove the crusts off the bread.
Spread the cream cheese mixture on the bread.
Lay thin slices of smoked salmon over the cream cheese layer.
Garnish each sandwich with a tiny sprig of dill.
Cucumber Sandwich
To make the spread, combine softened cream cheese with herbs and seasonings.
Peel the cucumbers and thinly slice to about ⅛ inch thick.
Using a sharp knife, remove the crusts off the bread.
Spread the herbed cream cheese on each bread slice. Make sure it goes to the edges. On the bottom slices of bread, layer the cucumber slices, and season with some fresh cracked black pepper.
Assemble your sandwiches and cut them into 3 or 4 finger slices.
Egg Salad
Make your hard-boiled eggs beforehand.
Mash eggs, mayo, yogurt, and mustard with a potato masher or a fork.
Stir in dill, parsley, salt, and pepper.
Using a sharp knife, remove the crusts off the bread.
Spread egg salad onto 2 slices of bread.
Assemble your sandwiches and cut them into 3 or 4 finger slices.
