TRUFFLE, MUSHROOM, AND LEEK TART
Hard to go wrong with these ingredients. They were obviously super freaking delicious.

1. Preheat
Preheat oven to 400 degrees.
2. Saute Sage
In a skillet, heat 2 tbsp butter over medium heat. Saute sage leaves until crisp, about 5-7 minutes. Remove sage and set aside on a plate with a paper towel.
3. Saute Leeks
In the same pan, add 2 more tablespoons of butter and saute leeks. Cook until tender, about 3-4 minutes. Set aside.
4. Saute Mushrooms
In a separate pan, add 1 tbsp of truffle oil and saute mushrooms for 3-4 minutes, until tender. Set aside.
5. Build Your Pastry
Line a baking sheet with parchment paper and roll out puff pastry. Cut the puff pasty into 8 even squares and place on the baking sheet. Add a bit of mushrooms, leeks, and a bit of shaved truffle cheese to the center of each square.
6. Egg Wash
Mix your egg with a splash of water in a dish and brush along the border of your puff pastry squares.
7. Bake
Place the pan with the tarts in the oven and cook for 15-18 minutes, or until golden brown.
8. Finish
Top with a drizzle of truffle oil, truffle cheese, flakey sea salt, and a sage leaf. Serve and enjoy!
