FRITTATA LORENA
Frittata Lorena is my Italian twist on Quiche Lorraine.

1. Preheat Your Oven
Set to 400° and prepare your ingredients.
2. Whisk Your Mixture
Whisk eggs, heavy cream, and salt until smooth and set aside.
3. Chop and Shred
Chop bacon into ½ inch pieces, dice shallots, and shred cheese.
4. Cook Your Bacon
In an 8-9 inch cast iron skillet, cook bacon over medium-high heat until crisp (about 8 minutes) and set aside.
5. Cook Your Shallots
In the same pan, melt butter and cook the shallots until translucent (about 3-4 minutes).
6. Add Bacon Back
Once the shallots are cooked, add your bacon to the pan and distribute them evenly along the bottom of your pan.
7. Add Your Egg Mixture
Pour in egg mixture and top with cheese.
8. Bake Your Frittata
Bake for 12-15 minutes. Remove from the oven and let cool. Top with flaky salt, black pepper, extra cheese, and chives before serving.
