STEAK WITH BLUEBERRY SAUCE
Blueberry’s with your steak? I know this might sound like an unusual pairing, but you’ll just have to take my word for it. Years ago, I had this combo at a restaurant that is no longer around, so I had to recreate it at home. I hope you give it a try.

1. Cook the Steak
Season steaks with salt and pepper and cook on the BBQ. I like my steak medium rare (125°F to 130°F) so I cook them on medium-high heat for about 10 minutes (5 minutes per side) and then let them rest for 10 minutes.
2. Make the Blueberry Sauce
While your steaks are cooking, you can work on the blueberry sauce. Add the blueberries, red wine, brown sugar, and salt in a small saucepan and simmer over medium heat. Using a wooden spoon, stir periodically to break up some of the blueberry skins. Cook sauce for about 6 - 8 minutes. It should thicken.
3. Finish
Remove from heat and let rest for 5 - 10 minutes. It will thicken more as it cools. Top your steaks with blueberry sauce, serve, and enjoy!
