PANZANELLA SALAD

Bread. Tomato. Mozzarella. This is the salad to make when you’re really just craving pizza.

Time: 20 min | Difficulty: 1/5 | Servings: 2 – 4

1. Prep

Preheat the oven to 375°F and line a large baking sheet with parchment paper.

2. Toast

Cut or tear your baguette into 1-inch pieces, place them on the baking sheet, drizzle with olive oil, and season with salt and dried basil. Toss to mix well and bake in the oven for roughly 15 minutes. You want them to be toasted, but not completely hard.

3. Chop

While your croutons are baking, cut your cherry tomatoes in half, slice your red onion, and chop your basil.

4. Make Your Vinaigrette

Whisk together all the ingredients. Taste and adjust based on your flavor preference. Tip: if you want it to be on the sweeter side, you can always add a little honey

5. Mix and Plate

In a large bowl, add your croutons, tomatoes, mini mozzarella balls, and red onion, and coat in dressing. Toss to mix well.

Add to a bowl for serving. Top with a piece of fresh basil and more dressing if you like. Enjoy!
