WHITE BEAN & FENNEL SALAD

Fennel is underrated IMO, and it has incredible health benefits, so I’m going to teach you how to make a delicious white bean and fennel salad.

Time: 15 min | Difficulty: 1/5 | Servings: 2 – 4

1. Wash and Chop

Wash and thinly slice the fennel bulb, cut the cherry tomatoes in half, and chop the parsley.

2. Make the Dressing

In a small bowl, whisk together your dressing ingredients.

3. Drain

Drain and rinse the cannellini beans.

4. Mix

Add fennel, tomatoes, parsley, and cannellini beans to a bowl. Add dressing and mix.

5. Finish

Plate salad, top with fresh parsley, basil (if using), shaved parmesan, and some flakey sea salt. Enjoy!
