HEARTS OF PALM CEVICHE
On a recent vacation in Cabo, I had this delicious hearts of palm ceviche at Cocina y Cantina in @haciendacabo and just HAD to recreate it. So happy with how it turned out and now I can’t stop making it.
It’s quick and easy to whip up (takes less than 15min), full of nutrients, and under 125 calories per serving!

1. Chop
Slice your hearts of palm into ½ pieces, thinly slice the onion, cut cherry tomatoes in half, and add all to a bowl.
2. Squeeze and Drizzle
Squeeze in juice from the lemon and lime. Add cilantro, a drizzle olive oil, and a large pinch of salt, and mix.
3. Slice
Cut avocado into cubes and gently mix in.
4. Finish
Plate and serve with tortilla chips.
